The "old search" is definitely the way to go-- the new search makes my head spin.
I have had some luck with the 1911 census by doing the following:
1) Search for the surname in the 1911 summary books-- only the surname, since often the summary books just say "Mr" or "Mrs" (or sometimes "Reverend") and no forename.
2) If you are lucky enough to find the household, you can then browse through the 1911 census images and find the page by doing the following: When you are in the summary books database and have found the page, look up at the top and see the path that Ancestry thinks you have taken to get there. That will be the county, parish and subdistrict. On the image itself, at the far left, will be the schedule number for each given person, before their name. Note all that down.
3) Go to the 1911 census database and browse the pull down menu at the right. Choose county, civil parish, sub-registration district and enumeration district as already noted. Then guess on the page number by multiplying the schedule number by two (there is a cover sheet and then the actual schedule for each household, so two pages). If you don't end up right on the correct page, then look at the schedule number where you have arrived and guess how many pages further or back you need to go.
Sounds complicated, but once you have done it all will be clear!
